Faculty of Health and Society

Our education and research is conducted with the vision of promoting health and participation. Research environment
The major part of the research at the faculty addresses the two research and educational profiles "Biological Interfaces" and "Health and Social Conditions in a Life Cycle Perspective". The position will be active in Biological Interfaces, which has a focus on the interplay between materials, biomolecules, and cells, on molecular, nano, micro, and macroscopic levels. The faculty research is also linked to the research programme "Biofilms - Research Center for Biointerfaces" (www.mau.se/biofilms) which combines research with medical, dental, food, and environmental applications, at three faculties, in close collaboration with regional industry.

Post-doc/Researcher position: Nanocapsules and recombinant proteins for nutritious vegan cheese making

The focus of the project will be on the development of nanocapsules and plant-based emulsion for vegan cheese making. The main tasks of the post-doc will be the following:

• Production of recombinant milk proteins.
• Formulation of plant based emulsion using recombinant milk proteins, with properties that mimic casein micelles.
• Inclusion of currently available formulation of nanocapsules in the plant-based emulsion (2) and eventual improvement of the formulation.

Required Qualifications and Criteria for Assessment of Applicants
Candidates must have demonstrated scientific competence corresponding to a doctoral degree in food science and technology. The ideal candidate has a cross-disciplinary background with general competence in formulations in food chemistry and molecular biology. Previous experience of having worked with biomolecules in formulation chemistry is required. Recombinant protein production is a desirable skill.
