hela Sverige Fractionation of wheat bran to create functional ingredients
We are looking for a PhD student who is interested in research on how structural and functional properties of foods affect their properties. The development towards a sustainable society requires new approaches to produce materials and food. Wheat bran is currently a by-product, this project leads to the use of bran as food in accordance with the circular economy concept within the National Food Strategy. Grains is a renewable resource that can be used to produce bioplastics, new functional materials and novel foodstuff. Products can be formed having excellent mechanical properties, such as higher elastic modulus. The work will include design of the fractionation process and functional characterization of the different fraction and its use in model food systems. The general aim is to create new functional ingredients from wheat bran through fractionation, pre-processing and extraction. This will mean to characterize and understand the properties of the ingredients, control these properties through process and raw materials, as well as establish the relationship between the ingredients and their function in model products such as emulsion, foam and gels.
This work will be conducted in a research-intensive environment at the Biocenter at Ultuna campus in Uppsala. The main focus for this appointment lays in the study of structure properties. PhD student for 4 years, 100% employment.
Qualifications
The successful applicant for the position as PhD student should hold a university degree in food technology, food science, biotechnology or similar. Documented experience from wet laboratory work in related areas will be considered as a merit. Knowledge on the structural and functional properties of foods and techniques to study such is central for employment. Personal qualities such as sense of responsibility and ability to independently perform duties as part of a research team will be valued. Well-written and spoken English is required. Knowledge in Swedish is a merit.
A person has basic eligibility for third cycle education if he/she has taken a second cycle qualification or has completed course requirements of at least 240 higher education credits, including at least 60 higher education credits at second cycle education. Upper secondary school grades equivalent to English B/English 6 are a basic requirement.
