The research area
The research focuses on studies on the quality of foods and on product development, by analysis and characterization of the nutritional and technological quality of raw materials and foods. Systematic studies of the influence of food processing and storage on the properties of food strive to develop tasty, healthy, convenient and sustainable foods and ingredients with an increased content of essential nutrients. So far, interest has been directed at fruits and berries, dairy products, cereals and legumes, with root and cruciferous vegetables to be studied in the future.
Another focus is research on nutrient bioavailability, metabolism and diet-health associations. Advanced in vitro and in vivo human models have been developed and used to determine the bioavailability and bioactivity of the vitamin folate. In collaboration with others, the effects of synthetic folic acid versus natural food folate on one-carbon metabolism were investigated using metabolomics-based techniques. A goal is to expand research focus to a number of micronutrients and bioactive components (e.g. proteins, lipids and fiber), when studying the metabolic effects of foods and diets.
The ultimate goal is to develop healthy functional plant foods and to document their health effects with respect to non-communicable diseases.
Duties
The appointee is expected to play a key role the current and future research activities of the platform. In collaboration with colleagues on the platform, he or she will be required to establish and validate methodology for quantification of folate, methyl donors and other micronutrients in food and clinical samples using HPLC and LCMS. The appointee is also expected to supervise studies on food processing, clinical trials with human volunteers, and metabolomics-based investigations of human one-carbon metabolism. To a minor extend the appointee should participate in the supervision of bachelor and master degree projects and should demonstrate potential to supervise PhD students.
Qualification requirements
Eligibility requirements for the position of research assistant include a doctoral degree in Food Science or equivalent scientific competence and documented research experience in food science. In the first instance, applicants must have been awarded a doctoral degree or achieved corresponding competence no more than seven years before the final date for applications. If there are special reasons for doing so, applicants who been awarded their doctoral degree more than seven years ago may also be considered.
We are particularly seeking a candidate with documented expertise in folate analysis, food processing, the implementation of human intervention studies and NMR metabolomics, being relevant qualifications for research on the food science platform.
The quality and scope of the skills required for eligibility will be used as a basis for assessment.
Other assessment criteria
The assessment will also attach great significance to the ability to establish research activities, including obtaining funding for research, and to establish collaborative projects in research and higher education
This position is a fixed-term appointment (for two years, with a possibility of extension) in close conjunction to the research framework of the food science platform, and the appointee's competence should strengthen current and future research activities. The appointee should have documented research experience in food chemistry, food technology, nutritional science and metabolomics. The appointee should show potential in both engaging in productive research collaborations on the platform with other national and international research institutions and stakeholders, and developing his or her own research program including obtaining funding for research activities. Documented experience of classroom teaching at BSc and MSc level in the field of food science is a merit.
