Why this role Real influence: Pre-opening tastings, dish development, daily specials.
Leadership: Run the pass, coach the team, set the pace.
Growth: Clear path to Head Chef as we scale.
Balance: Predictable rota across lunch & dinner.
What you'll do Lead service at the pass-timing, quality, communication.
Own prep systems, mise en place, and station standards.
Train new team members; lead sharp, efficient briefings.
Support stock/ordering, control waste, watch costs.
Keep HACCP/food safety spotless; ace audits.
Pre-opening: equipment checks, recipe cards, menu run-throughs.
