Product Design and Perception is part of RISE Agrifood and Bioscience and consists of 25 persons who design biological structures with specific properties, mainly for future innovative and healthy food, but also for the pharma and hygiene area and for other technical applications. Many projects deal with aroma, taste and texture, and how this is related to other product properties, to processing and raw materials.

About the position
We are looking for a post doc in food science with focus on structure and material properties. The position is specifically connected to a three -years FORMAS funded research project: "Natural texturisers for easy swallowing _ Plant polysaccharides role on food swallowability in a biomimetic throat and in vivo". The project work is done in close cooperation with KTH Royal Institute of Technology in Stockholm. You will be part of an international and multidisciplinary team of experts in soft materials science, fluid mechanics, sensory and consumer science. We are interested in understanding how different polysaccharides present in plant materials such as fruits, cereals and algae behaved under swallowing conditions. As a post doc in this project your main task will be to analyze rheological properties of different plant polysaccharides using rheometers and a biomechanical throat. You will plan measurements, prepare samples, perform measurements, evaluate results and compile the results into scientific publications. Our aim is to aid design of foods for populations with specific needs such as swallowing disorders.

Qualifications
The applicant must hold a doctoral degree (Ph. D) preferably in Chemical Engineering, Chemistry, Food Science or equivalent. Experience in rheology and microscopy techniques such as confocal scanning laser microscopy (CSLM) is a merit.

Position and start date
We offer a fixed-period employment of one year placed in Gothenburg. Applications will be evaluated continuously, and the start date will be agreed with the successful applicant.
