Research environment: Research and education at the Department of Food Science focus on food composition and follow the food chain via preparation and processing to food raw materials. The composition, quality (sensory, health, safety) and functionality of food are considered in relation to primary production, processing by the food industry and the interests of the individual consumer. The research is divided into four areas; dairy products, food chemistry, meat and fish quality and plant product science (www.lmv.slu.se) and the department is part of Uppsala Biocenter at SLU (

Job description: A post-doctoral position is available at the Department of Food Science to conduct research related to interactions between vitamin D binding protein and vitamin D/vitamin D metabolites in milk. The effect of temperature on interactions between vitamin D and its metabolites with vitamin D binding protein and ß-lactoglobulin, a potential vitamin D carrier, will be studied. This knowledge is important for a better understanding of how various factors influence upon vitamin D stability and bioavailability in foods, with the ultimate goal to improve fortification protocols.
Eligibility: Applicants should have a PhD degree in Food Science or other relevant area with experience in affinity and kinetic measurements using surface plasmon resonance biosensor technology.
The position is full-time and will be granted for a period of two years, starting early autumn 2009.
