Gelation properties of protein from Swedish legumes
Description:
We are looking for a PhD/Licentiate student who is willing to conduct research on how structural characteristics of foods and biomaterials affect their properties. The development towards a sustainable society requires new approaches to produce materials and food. Legumes, a protein-rich, gluten-free crop, represent a sustainable alternative to animal-based protein sources. Of the legumes, soy is the most common base for food products, but has limited cultivation in Sweden. Development of novel foods based on non-soy legumes is hampered by lack of understanding regarding formation of gels and other structures. Faba beans are high in protein, grown throughout Sweden and underutilized as human food. Therefore, they are suitable as a model 'novel' legume for characterization of protein gel formation.
The research will include optimization of extraction methods for improved composition and yield as well as investigation of the gelation of extracted fractions, singly and in combination, under various conditions. Furthermore, there will be the opportunity to study the effect of incorporating side streams from the protein extraction, i.e. starch and fibre, on gel properties and the impact of adding fats to form emulsion gels.
Understanding the molecular mechanisms of gelation supports the streamlined design of novel foods based on faba and other non-soy legumes - greatly improving current empirical (trial-and-error) product development. Methodologies developed here are a pipeline to characterize other plant-derived proteins to be used in novel foods. Innovation opportunities with faba proteins will be communicated to the food / agricultural sectors.
Qualifications:
The successful applicant for the position as PhD student should hold a university degree in food technology, food science, biotechnology or similar. Knowledge on the structural properties of foods and techniques to study such is central for employment. Experience in microscopy (light, confocal, electron) and rheology is meritorious. Personal qualities such as sense of responsibility and ability to independently perform duties as part of a research team will be valued. Well written and spoken English is required.
Place of work:
This work will be conducted in a research-intensive environment at the Biocenter at Ultuna campus in Uppsala.

100% employment as PhD student for a Licentiate degree in 2 years, with possible extension. Gelation properties of protein from Swedish legumes.

A person has basic eligibility for third cycle education if he or she has taken a second cycle qualification or has completed course requirements of at least 240 higher education credits, including at least 60 higher education credits at second cycle education. Upper secondary school grades equivalent to English B/English 6 are a basic requirement.
Selection among applicants meeting the requirements is made with reference to written application including curriculum vitae, copies of degrees and transcripts of academic records, one copy of the dissertation for masters or undergraduate degree, a list of at least two references familiar with the applicant's qualifications, certified knowledge of the English language and an interview.
