The position is as a full-time chef with 5 year of previous experience in a catering/restaurant business.
The chef should be able to develop dishes based on Mexican Pre-hispanic cooking, mainly from the Otomi and Huasteca Hildaguence traditions. Experience in preparing dishes, including presenting food, coordinating chef staff along with maintaining and developing kitchen equipment is essential.
Requirements
Proven work experience as a Chef within Pre-hispanic Mexican food.
Experience in developing dishes and menus based on pre-hispanic recipies.
• Experience from the traditions and food from the Otomi-culture and from the region of 'Huasteca Hidalguense'.
Advanced knowledge of preparing traditional pre-hispanic ingredients, such as various chilies and different type of corn.
Know the traditional Mexican home cooked food as well as the street food.
Hands-on experience with various kitchen equipment
Must be willing to continue to grow, learn and experience new adventures
Experience in coordinating kitchen staff
Ability to remain calm under pressure
Provide assistance to prep cook and other kitchen staff as needed, especially during peak time.
Familiarity with sanitation regulations.
Fully profound in Spanish and basic knowledge in Swedish.
Basic Knowledge of the language Otomi is preferred but not a demand.
Experience and Education
Chef for 5 years in traditional Mexican Chef specialized in the pre-hispanic food
Technical degree in chemistry or cooking.
Chef degree or similar within Pre-hispanic food
